Alley Food: Bruschetta Caprese with Peaches


This is basically the most delicious thing ever.
It’s a mash-up of bruschetta and caprese but with peaches instead of tomatoes.
 
 
It's like summer in your mouth.

Ingredients are simple: extra ripe peaches, fresh mozzarella, fresh basil, olive oil, red wine vinegar, salt, pepper and sliced French or Italian bread.

How I did it: I took some ripe peaches, chopped them up, added some fresh mozzarella, fresh basil from the alley of dreams, drizzled it all with olive oil, red wine vinegar, sprinkled salt and pepper and let it sit in the refrigerator for 30 minutes. Then, I brushed French bread slices with olive oil and baked them until they just started to brown and harden. Topped those puppies with a healthy spoonful of Bruschetta Surprise and – done! I got rave reviews on this one so I’ll definitely be making it again.
